Recipes are used for making that special dish for the first time, enhancing a meal that you have made many times but now want to change, or for just adding to a marvelous collection of ideas for meals for the future.

A recipe can consist of only two ingredients or so many you cannot even fit them on your countertop. It can be as simple as simply stirring, or very complex, like dredging in flour, then dipping into a beaten egg, then covering with bread crumbs, quick-frying and then finally baking the port chop. Yes, for a simple port chop. But many times you will find that the more effort you put forth in preparing the meal, the better it tastes in the end.

Most cooks have several very important ingredients that are put in almost every dinner recipe they make. These may be onions and garlic. Or perhaps herbs like thyme and basil, or a combination of Italian seasonings. This same cook may also have ingredients in the cupboard that he or she bought for one special meal on an occasion, and it has been sitting in that cupboard ever since. This might be liquid smoke, or fenugreek.

Perhaps the greatest experiments with recipes are those from other countries. You can try something Greek, like moussaka, or Italian, like lasagna, or East Indian, like lamb korma, or Mexican, like carne asada tacos.

You will find that the main difference between the different ones of various countries is the spices they use. In Greece, they use a lot of cinnamon on their meat to sweeten it up. Italians like their tomato sauced spiced up with oregano, basil, and thyme, among other spices. In India, the use of turmeric, cumin and coriander go far. Mexicans use a lot of cayenne and chili powder. And the list goes on.

You will discover that the joy of collecting healthy recipes will easily take over your book shelves. You will have recipe books on fish, steak, potatoes, desserts, casserole dishes, meatless meals, poultry, crepes, Christmas, and wok cooking, to name a few. Then there are the recipe magazines that will overwhelm you. And do not forget about the recipes you cut out from the newspaper, because you know you are going to try them some day.

You can stumble on collections in thrift shops. These are from clubs that people were members of and received them monthly and put them in binders. Or you will run across other types of collections that resemble a set of encyclopedias. There are annual collection recipe books for the year. And you would not want to pas up some of those really old cook books. They usually have a couple of really great classic formulas that you thought you would never find. Then there is the kind of collection that can drive a cook crazy, when they put them all in the index box. The best thing about these 4×6 inch cards is that you do not have to mess with a book closing on you while cooking.

Yes, you can collect recipes your whole life, fill an entire room with recipes. But the best cooks in the world do not even use them.

Spaghetti, Carbonara is an Italian pasta dish using eggs, pecorino romano, guanciale, and black pepper. The dish was formulated in the middle of the 20th century.

The dishes vary, although all agree that cheese (Parmesan, pecorino, or a mixture), egg yolks (or whole eggs), cured fatty pork, and black pepper are basic. The pork is fried in fat (olive oil or lard); a mixture of eggs, cheese, and butter or olive oil is combined with the hot pasta, cooking the eggs; the pork is then added to the pasta. Guanciale is the most traditional meat, but pancetta is also used. In the US, it is regularly made with American bacon.

Cream is not common in Italian recipes, but is used in the United States, France, Spain, the United Kingdom, Australia and Russia (especially in Moscow). Other Anglo/Franco versions on carbonara could very well include peas, broccoli or other vegetables added for colour Another American version includes mushrooms. Plenty of these preparations have more sauce than the Italian versions.

In all versions of the recipe, the eggs are added to the sauce raw, and cook (coagulate) with the heat of the pasta itself.

Try this spicey version !

This spicy interpretation of spaghetti carbonara is made with common ingredients including bacon, garlic, black pepper, red pepper, parmesan cheese, olive oil, cream, and eggs.

Serves 8

Ingredients for Spicy Spaghetti Carbonara:

1 pound bacon (cut into 1/2 inch pieces)

2 pounds spaghetti or other pasta

2 pasteurized eggs (equivalent of 2 eggs, pasteurized)

1/8 pound grated parmesan cheese

16 ounces whipping cream (1 pint)

3 tbsp butter or olive oil (or mixture of two)

2 tsp Red Wine Vinegar

1 clove Garlic (minced)

1 tsp Crushed Red Pepper (or more to taste)

1 tbsp Black Pepper (or more to taste)

Instructions

Bring a large pot of water to a boil whilst cooking the bacon.

Cook the bacon until it starts to become crisp and the majority of the fat has cooked out. Drain the fat. Add the butter or olive oil, garlic, and black pepper. Keep cooking for 3 to 5 more minutes.

Add the pasta to the water and cook as directed. At the same time, add the cream and vinegar to the bacon, stir and cook over medium heat until the sauce thickens (it should be the right consistency at about the same time that the pasta is done). While the sauce is thickening (and the pasta cooking) thoroughly blend the eggs with the red pepper and grated cheese.

When the pasta is done, drain, and put in a serving bowl. Add the egg and cheese mixture and toss. While tossing, add the bacon and cream sauce. It is beautiful. Hope you enjoy !

Long Island And Cheeseburgers

When it comes to food, I am no gourmet expert. I do however know what I like. Now there are many foods that I love and really like but when it comes down to it one of my Favorite foods has to be Hamburgers!

Now I have been all over and while I have been to some really great Burger Joints in Upstate NY and a few other states, I have spent allot of my life on Long Island in New York. There are many great places to eat here on Long Island but when it comes to Hamburgers I have two favorite places.

The first is “All American Hamburger Drive” in 4286 Merrick Rd Massapequa, NY 11758 this place has been around as long as I can remember. As a kid growing up every trip home from Jones Beach always ended with a stop at this old fashion Burger Joint. Their is always a line outside of All American but the wait is worth it. They have two Burgers I love Their Quarter pounder with Cheese and their Double Double which is a double Burger with double cheese. I have been trying to figure out which one I like better for years. I have had fun trying but have not figured it out yet, If I ever Figure it out I will let you all know ! All American also has some of the best Fries, Onion Rings, Knishes and Milk Shakes I have ever had!

Now where All American Hamburger Drive In sells a fast food style Burger and I love them, There is also another Style Burger which I love too and that is the Bar Burger! Their are many really great places on Long Island that sell some really Great Bar Burgers but as the old saying goes when it comes to the best “their can be only one”!

My Favorite Long Island Bar Burger I have had so far has got to be from the “Triangle Pub” 381 Old Montauk Hwy Eastport, NY 11941 I have been to this place a bunch of times over the years and their Burgers are always Great! Now I can only speak about their large Burgers (Never got one of the small ones). The Triangle Pub is known by many across Long Island for its Giant Burgers and Giant Glasses of Ice Cold Beer! There is not much to say about the place as I have never had anything there beside the Beer and large Burger meal. The people are friendly, The service is good, The Location is Nice and the Giant Burger and Beer Combo with French fries or onion rings is incredible. I love stopping by either for dinner or lunch !

Like I said before I am not a food expert I just know what I like. I have not eaten every where on Long Island so if you know of a place that you think serves better Burgers then the two I have just told you about then let me know what they are called and where they are located and I will be there!

Cooking with a crock pot, or slow cooker, is said to save time and money. Is there really any truth to this assumption?

Save Time With a Crock Pot – This may seem like an oxymoron to some people. After all, how can having a meal in the crock pot for eight hours save time? It all depends on your lifestyle and your routine for dinnertime, but most have to agree that getting dinner in the crock pot, then walking away from any further time spent in the kitchen, definitely frees up time.

Assuming that one person can take on the job of “chief cook and bottle washer” is simply not a reality in today’s family. No hot burners or open flames mean that you can safely ask your youngsters to help out in the kitchen, adding ingredients to the crock pot, washing vegetables, and the like. Time you and you alone would have spent preparing your meal is no longer necessary. Because everyone can help, you are now free to take care of something else!

Even standing over a stove and stirring a pot, watching it boil so to speak, is time that you could have for something else. Once the ingredients are in the crock pot, you can walk away and get on with your day and your errands. Given that an oven commits about 2500 watts to a meal, while a crock pot only commits about 200 watts, you can see where you would save energy. Even if you consider that you’ll be cooking a pot roast in a crock pot for twice as long as in the oven, you’re still saving total energy used. Your oven would use 10 kWh to cook a 3 hour pot roast, while your crock pot would use 1.2 kWh to cook the same pot roast for 6 hours. Even roughly estimated, there’s no denying the fact that your oven uses a whole lot more energy than your crock pot.

You know what it’s like when you’re in the middle of running kids around and finally break down and call the hubby to pick up something for dinner. You know it’s going to be an expense that you really didn’t have in the budget this week. The evening rush is not the time to start thinking about dinner if you want to save money. When you’re out driving the kids between practices and lessons, your crock pot could be happily bubbling away at home on your kitchen counter. Dinner is ready when you are, and no more money wasted on fast food stops!

Save Both Time and Money With a Crock Pot – Cooking two or three meals at a time in a big crock pot is definitely a time and money saver. Preparing once and eating twice saves time in the kitchen, and having leftovers for other meals or for lunches saves money. Also, having your crock pot cooking for 8 hours and preparing two meals during that time saves on your energy usage. Time spent running around at lunch hour buying a lunch can now be spent on something more productive, not to mention the money saved by not buying your lunch out. Some people are deep thinkers like me and wonder what people put in the pantry. I have always wondered what kind of things besides food that people put in their pantry. I have put different things such as my broom and dustpan in my pantry.

When I first moved into my home someone had left some tape and even a plunger in my pantry. Since my pantry is in my kitchen I prefer to have kitchen items in it. I would put dishes in mine if I needed to and I would put pickled things in mine. Right now I have my canned goods and boxed dinners.

A pantry is suppose to be used for putting food in and this was the original use of them, but a lot of people have more than enough storage and they simply use theirs for storing things such as cleaning supplies and blankets or extra sheets.

Mine is close enough to my living room that I can store anything I want in it. I choose to store things that can be eaten because I do not have a whole lot of room in my cabinets for anything other than my dishes.

The pantry can hold anything that you choose you want to put in it because after all it is yours, that is, if you are lucky enough to have one in your home. Pantries can be a number of different sizes and can have many shelves in them and some of them only have a few shelves.

As long as you are happy with what you put in the pantry then you should not worry about what other people think because some people think it is silly to put anything other than food in your pantry but I think you should be able to put whatever you want in it and not have to worry about what other people think about it or say about it.
